Hi everyone, here I am again, founder and president of Bob's Red Mill and I have never been more excited about whole grain oats than I am right now. Oats are perhaps the greatest of all whole grains. They are delicious, easy to make, low in fat, high in protein, and a wonderful source of fiber- especially soluble fiber. Soluble fiber matters so much because when you eat it, it absorbs cholesterol in your gut, which also lowers the cholesterol in your blood and that's good for your heart. It's an awesome grain, and naturally gluten free.
Unfortunately, oats have been off limits for a gluten free diet because of farming practices. Farmers generally rotate crops between wheat, barley, and oats. Throughout the growing, harvesting, trucking, and storage processes, oats can become contaminated by glutinous grains. Bob's red Mill has partnered with a group of farmers that grow exclusively oats. I have never had oats with such a robust flavor and creamy texture. Cook them just like regular oats: one part oats, two parts water, and a little salt.
