The cut resistance of any glove is determined by how much weight in grams is needed to cut through a given material with 25 mm of blade travel. Levels range from zero to five on the ANSI scale with five offering the highest cut resistance. Another factor to consider is a glove's material. Some common cut resistant materials on the market include Spectra, Dyneema, Kevlar, and metal mesh. Gloves composed of the Spectra fiber can fall anywhere between the level one and level four cut resistance depending on what other fibers they're working with. In general, these gloves are very lightweight and provide excellent dexterity and mobility, making them great for light kitchen prep like cutting fruits and vegetables.
If you're looking for a little more protection for heavier kitchen prep such as chopping meats and cheeses, then our Kevlar gloves are good choices.
