Aging and curing meats can be a complex and time consuming process, but thanks to this Stagionello Maturmeat 58" glass door stainless steel meat aging and curing cabinet, you can easily manage both processes from the same efficient unit. While dry aging can sometimes take several weeks to as long as several months for the meat to develop its full flavor and achieve its optimum tenderness, this cabinet does the job perfectly in as little as 11 days. Curing, meanwhile, can sometimes take many weeks to complete, but this cabinet allows you to produce delicious salami in an average of just 20 days without the need for chemical additives! The foundation of this versatile cabinet is its advanced touch screen controllers that independently control the Stagionello curing cavity and the Maturmeat aging cavity.
The curing cavity's controller automatically manages the cabinet's temperature, humidity, air speed, pH monitoring, and smoke/flavoring for the duration of the recipe to provide you with the precise, controlled environment needed to serve the best cuts possible. The aging cavity's controller similarly manages the cabinet's temperature, humidity, and air speed for the duration of each of the programmed phases which include salting, stewing, smoking/aromatization, drying, and seasoning to give you complete yet simple control over the aging process from start to finish. The Stagionello curing cavity's 6" touch screen display features 5 preset recipes while the Maturmeat aging cavity's display provides 30 preset recipes, and each has enough internal memory to store up to 100 additional recipes so that operating this unit is easy for anyone.
An all stainless steel construction provides the durability you need in your commercial kitchen, and can be easily wiped clean after use. With the integrated door lock, your product will remain safe and secure during the curing process, yet easily accessed when needed. Adjustable legs also come standard, allowing you to level the unit on uneven floors to prevent rocking and tipping of the cabinet during use. To hold your meats, the interior of the cabinet comes with 9 guide sets, 20 salami rods, and 5 stainless steel racks. Temperatures ranging from 23 to 122 degrees Fahrenheit can be maintained within the cabinet, letting you customize the curing process to your specific needs. A 220V electrical connection is required for operation.
