This steam table is intended for dry use, but if you want to use moist heat, try pairing it with compatible spillage pans (sold separately). Simply fill your spillage pan with water and place your food pan inside.
The body of this unit is constructed of durable 22-gauge type 430 stainless steel and heavy-duty hardware. The top and wells are made of 20-gauge type 304 stainless steel, while the cutting board support shelves are made of 16-gauge type 430 stainless steel.
Use the undershelf to store extra serving utensils, food pans, or lids to keep all of the tools you need close at hand.
The polyethylene 8" deep by 1/2" thick cutting board gives you a little extra work space for changing out food pans or filling plates.
For optimum heating versatility, each individual well is independently controlled by an infinite control knob.

Since we're on a tight budget, this steam table had our name written all over it. Make sure you have the right outlet to accommodate the beastly plug. The cord isn't very long either so make sure that outlet is right behind where the steam table is going to go.
These units look great work great but there are a few flaws the cutting service is not like a normal cutting board it is as smooth as glass causing anything you put on it to slide right off, the cutting service is also thinner and not as wide as other name brands steam tables also the brackets that hold the whole cutting board in place are somewhat flimsy, other then that the units are great they are dry heat replacement parts are very reasonable. we use them in several locations
