With a floating wire design, this blocker will ensure that blocks of cheese are cleanly sliced and ready to sell or add to a recipe! By pulling up on the ergonomic handle, the wire raises above the platform. To cut, lower the wire and pull it through the cheese.
This Garde cheese blocker is equipped with a stainless steel cutting wire, allowing you to cut through cheese of all densities and thicknesses. Plus, thanks to the thin opening running the length of the blocker, the wire lifts from below when needed, but stores safely against the unit when not in use. The stainless steel cutting wire on the cheese blocker is easily replaced, and the water-resistant stainless steel construction ensures long-lasting, durable use. I didn't realize this device existed until I found it while browsing cheese. Very easy to use and makes quick work of cutting down large blocks. Very quick and easy to clean!

The part is the bar so that rectangular blocks of cheese stay squared up for me.
