I have gone through, literally, dozens of silicone muffin molds. I find they are either far too stiff, or far too flexible. This Matfer mold is quite stiff, but still flexible enough you can bend the sides and "pop" out your muffins after a few minutes of cooling. No part of the muffin remains stuck to the sides of the mold (grease / oil prior to baking) and I find there are few, if any, issues re broken muffins.
These are worth every penny. I highly recommend.

The egg bites are very light and don't burn and stay inflated. They are easily removed and can be put in a water pan to slow the cooking process. The only effort is keeping the eggs in the molds because they are so flexible. Easy to clean.

This mold has been an absolute life saver. I have tried other round molds, but in cold-process soap the heat can really effect the mold, this is the only one that has lasted. Perfect shape and easy to tap to release any unwanted air bubbles, I definitely recommend.

Love this mold for making toffee and for brownie bites. Only put a teaspoon of mix in each square, as I really overfilled them. Like that you don't have to grease or spray anything on them. They do in the dishwasher or hand wash nicely.
