As a huge fan of Matfer products, this strainer has not let me down. The price is ludicrous for what it is, until you consider the durability and quality of the item. I can assure you this strainer will pay you back tenfold due to the aforementioned quality / durability. We use this in out commercial kitchen to strain things like stock, but also for straining custards and purees for the ultimate smoothness our patrons require of us. If you need a good chinois, I do not believe you can do better than the Matfer Exoglass Strainer / Chinois.

How could a chinois be that good? This is the gold standard. Remember you don't want anything to make it through to the other side-from seeds to lumps. Exoglass products are awesome.

As far as I'm concerned this is the best chinois strainer on the market. Extremely fine mesh with a very durable plastic handle that doesn't heat up, but at the same time the plastic is highly heat resistant. You can use this for fine sauces, straining yogurt, or ever filtering fryer oil. The French know what they are doing... It is WORTH the price!
