This flour has the same protein content as the flour that King Arthur sells in grocery stores in the blue bag as "bread flour." I use it to bake artisan breads and have great success doing so. It has a touch more protein than All Purpose flour from King Arthur, and much more than most grocery store brands. I find that compared to King Arthur AP flour, I have a slightly easier time shaping my breads, and therefore they have a better oven spring. Very good for sourdough beginners like me. And I have nothing to complain about the flavor or crumb of my bread. I also feed this flour to my sourdough starter and it has done very well. I store it in a 64 qt sterlite tub, which just barely fit the flour when the bag was new.
