Excellent bread flour; I used this to bake bread for my whole family this summer. If you're using it in a recipe where you previously used all-purpose flour (like I was), combine the flour with 10% of its weight in vegetable oil before adding any water, to reduce how much gluten forms. (This is equivalent to ~1 tbs. oil per cup of flour, or around 3 tbs. per loaf.) I do second the request for a 25-lb. option, though; I might still have gotten this much in the order, but it would have been *much* more manageable in 25-lb. bags.

I dont understand the gigantic name, it makes no sense. The product is great for breads and doughs. excellent flavor and long shelf life. very soft and smooth texture. When i use it as a thickener, it imparts almost no flavor.
