The hooks and bowls can operate on 2 different speeds - the hooks run at low (120 rpm) and high (240 rpm), while the bowl operates on low (20 rpm) and high (40 rpm).

A built-in timer allows users to program and set appropriate mixing times for various food items, ensuring that you'll avoid overworking the dough. A series of safety measures, including an emergency stop and bowl guard switch, aid in protecting your staff and keeping this unit at an optimal level of performance for years to come. This mixer boasts a massive 200 qt. capacity that can be utilized to yield a large number of popular food items, such as pie dough, scones, and biscuits. I have had this mixer for about four months. I use it twice a week in my small micro bakery. I would venture to guess the stated capacity could be significantly exceeded with high hydration doughs. I find it to be a reliable workhorse. It has its limitations -- just one speed, stated capacity is low, and it is a pain to clean, particularly if the dough is still somewhat wet in the machine and you need to be thorough, as when removing the last remaining caraway seeds or something like that. However, it shows zero signs of struggle when mixing at capacity and the difference between using this and hand mixing, which I was doing, is huge. For the price, this seems to me to be a terrific value.

I bought this equipment on January 22, 2018 and today February 12, 2018 is already in trouble. It has no strength to mix 8 pounds of flour. Now I have to start the marathon to talk to the manufacturer explain the problem, send videos, wait, wait and wait until they have a definition for my problem. Meanwhile I have no equipment to work with. I think the Webstaurant should solve all this and not have me look for the manufacturer, since it is not even 30 days since I bought the equipment. I'm not saying that the equipment of this brand is not good, I'm saying that what I received is not good. and it is not fair that I have to resolve this with the manufacturer, I am convinced that this is the responsibility of the company I bought. how am I going to do without the equipment to run my bakery?

It has only one speed, which I tough it was fine for my dough type (one speed I know is slow, two speed is faster), but this speed is too fast to prepare my panzerotti, and the dough turns out very stressed out. So I will buy a dimmer to fix this problem.
