I have to say, I am terribly disappointed with my most recent order from Webstaurant. I ordered the 55lb bag of Caputo 00 Pizza Flour. It was delivered to me on 05/09/2024 and the expiration date was 06/12/2024. So I basically received super old flour that was going to expire in just over 30 days. I contacted customer service and explained the situation and the lady told me their policy is that their products will not expire for at least 30 days from the delivery date. I told her wow, they sure cut that close because mine was delivered within about 33 days of the flour expiring. I told her there's no way I'm going to use 55 pounds of flour in the next 30 days and her response was "Well, most of our customers are restaurants and they would easily use 55 pounds of flour in a month." Caputo “blue” pizzeria flour is one of the best 00 flours available. Designed for >700 degree wood ovens, it performs perfectly for that application. If you are cooking at a lower temperature, their Chefs flour or American would be a better choice. The bag I received had a best by date about a year in the future, you can’t ask for more than that. Good on Webstraunt Store for charging a real wholesale price also. The only way to get it cheaper is to walk into a restaurant supply store for cash and carry, assuming they have it, or order a pallet.

This is a great product, as I have used in the past, and at a great price at webstaurantstore.com. I would have given this a (1) Star due to shipping and arriving damaged, resulting in me having to throw out the entire bag due to moisture ruining it. Instead I am giving webstaurantstore.com a 5 Star rating for their customer service response to the issue. Once I submitted photos and the issues, they immediately asked if I wanted a replacement or refund. Only feedback for their shipping team is to wrap this item in a bag, as it would have avoided me having to throw it out due to transport damages.

The Caputo 00 Pizzeria is the gold standard of Neapolitan style pizzas and does not disappoint. Switching to this flour made a larger difference than expected for obtaining light and airy crusts with <24 hour room temperature fermentation times. We cook at approximately 800-900 degrees F and would not recommend this flour below ~700 deg F. Packaging from WebstaurantStore was very good and the flour was fresh.

During these hard times, I would like to thank this business for not jacking up the price of the flour I ordered. The person on another site that I buy from, went from $69 to $91 one month later and now they are selling a 55 lb bag of flour for $140. What a loser! I will not be ordering from them ever again, even if I pay a slightly higher price from this vendor, after everything goes back to normal. I am now boycotting the other vendor.
