Matfer Bourgeat 120005 5 3/4" Stainless Steel Double Edge Bread Lame / Dough Scorer with Cover

This was my 1st purchase of a dough blade and I am glad it has taught me lots of techniques, however I am sad because I can not change out the blade so I am on the look out again.

These are perfect for many different things I’ve used it to score fondant also to score homemade sourdough bread excellent quality

ok, this did a good job for a little bit but my knife is much sharper and it became useless quickly. I would either go with a higher quality or you might as well just use a sharp knife.

Pretty good lame (excellent for the price). The blade could be a bit sharper and you'll want to hold it at a decent angle so as not to tear higher hydration doughs, but works well and the safety cap clicks securely into place -- important if storing in a drawer.

Slicin and Dicin that beautiful sour dough. This made a big difference and is way better than the rusty old blades I used to use.

Honestly buy the razor blades to score your bread. These lames dull quickly and don’t do a great job even straight out of the package. Just get the razor blades, they’re soooo much better. Also scoring bread is so much easier when it’s cold

This lame was totally useless. It had no edge and wouldn't even cut the dough at any angle. I do not recommend at all. I am using my scissors, for now.

This item was hard to find in my small area. Love that it has a protective cover. Great quality. Meets all of my expectations. A must have for bread bakers.

The Matfer Bourgeat Stainless Steel Bread Lame is sharp. The blade protector is nice and allow for easy storage of this sharp blade. The lame does a good job of scoring dough for delicate loads.

I love my Mafter Bourgeat bread scorer. The blade is really sharp on both sides and on top of the blade. The handle gives me better control for when I score the bread. This blade is much safer than holding a bare blade. I also really like the blade cover.

I was hoping for a clean sharp cut for bread. While the blade looks sharp it more dragged the bread top. It did not create the desired effect. I think I need to look for a different scorer as this one does not seem to be very sturdy or long lasting either.

This works really well for scoring bread. I have a baking bread for about 10 years and this is a solid bread scorer. Best to keep the shield on at all times for this is super sharp.

True, this is a cheap buy but it is pretty sturdy in the hand. The blade isn’t quite right and leaves me without confidence to make the slash.

No need to use a regular knife for our sourdough as this works like a charm. It's very sharp and I love that it comes with a cover to keep hands safe.

This is a great dough blade, the blade is thin and sharp to allow you to easily score your dough. I like that the blade has a cover, this allows me to store the blade in a drawer with other utensils safely.

This bread knife works really good it has a nice thin blade I like the curve to it handles really comfy to use and I like how the lid clips on really great

It is a very basic dough lame and works great. For the price, it does the job well. The safety lid keeps the blade covered in a drawer.

I have had no luck using this blade when cutting dough. The blade I received is not sharp at all and doesn't go through my bread dough.

Excellent tool for the home or commercial baker. This is a very thin and sharp blade to perfectly score baguettes, boules, and all other forms of dough. We all know how dangerous a sharp tool can be - what I like is the tiny hole in the cap that's used to securely lock the blade when not in use.
