No baker's set of tools is complete without a high quality bread lame / dough scorer. This Matfer Bourgeat 120006 1" wide stainless steel double edged bread lame / dough scorer is perfect for creating ventilation slits in baguettes and a number of other baked goods. These cuts facilitate rising during the baking process. This scorer's beveled shape simulates the rounded edges of dough, producing beautiful, decorative indents in the baked loaves.

This stainless steel blade includes a plastic handle and sleeve for protective cover when not in use. As with any sharp object, extreme caution is advised when using this product.

ok, this did a good job for a little bit but my knife is much sharper and it became useless quickly. I would either go with a higher quality or you might as well just use a sharp knife.

Pretty good lame (excellent for the price). The blade could be a bit sharper and you'll want to hold it at a decent angle so as not to tear higher hydration doughs, but works well and the safety cap clicks securely into place -- important if storing in a drawer.

Honestly buy the razor blades to score your bread. These lames dull quickly and don’t do a great job even straight out of the package. Just get the razor blades, they’re soooo much better. Also scoring bread is so much easier when it’s cold

This lame was totally useless. It had no edge and wouldn't even cut the dough at any angle. I do not recommend at all. I am using my scissors, for now.

Makes nice, smooth-edged slits, even in very soft doughs. The curved blade makes one comfortable sweeping motion all you need to get just the right slashes and scores.

The Matfer Bourgeat Stainless Steel Bread Lame is sharp. The blade protector is nice and allow for easy storage of this sharp blade. The lame does a good job of scoring dough for delicate loads.

I love my Mafter Bourgeat bread scorer. The blade is really sharp on both sides and on top of the blade. The handle gives me better control for when I score the bread. This blade is much safer than holding a bare blade. I also really like the blade cover.

I was hoping for a clean sharp cut for bread. While the blade looks sharp it more dragged the bread top. It did not create the desired effect. I think I need to look for a different scorer as this one does not seem to be very sturdy or long lasting either.

This works really well for scoring bread. I have a baking bread for about 10 years and this is a solid bread scorer. Best to keep the shield on at all times for this is super sharp.

It's a blade that you can easily & safely cut your artisans breads with ease. I do recommend that you carefully clean your blade. In between slicing your dough. For depends of the dough. Might be sticky. Comes with a nice blade cover. So you can easily & safely store the blade. The price is unbeatable.

Excellent tool for the home or commercial baker. This is a very thin and sharp blade to perfectly score baguettes, boules, and all other forms of dough. We all know how dangerous a sharp tool can be - what I like is the tiny hole in the cap that's used to securely lock the blade when not in use.
