If you are in an area with a health department that uses the 41-degree baseline, you should be aware this unit will only maintain a 41 degree temperature under perfect conditions (no opening of doors, cooler-than-normal-kitchen environment, and already fully cooled products). To maintain 41 degree threshold in an operational kitchen, the "overnight" product temperatures need to reach 36-38 degrees to compensate for the inevitable catch-up periods with door opening and product cycling through your operating day. However, the lowest temperature we've ever taken inside this unit is 40.5 degrees under the perfect conditions listed above. We've also caught the cabinet temperature exceeding 43 degrees before the compressor ever engages (and no, this was not during a defrost cycle nor had we placed warm product inside or held the doors open - its just not designed to be aggressive enough for a commercial kitchen).
