We have been searching for richly flavorful mustard with a taste that would be similar to a cross between a traditional Dijon and the smooth spicy brown mustard found in stadiums. In particular, we were looking for a cost effective bulk source to use an ingredient in recipes. The Woeber's Dusseldorf Mustard checked all of these boxes. It has been delightful used directly for a variety of sausages, corned beef, and ham. In particular, we use it in Reuben sandwiches in place of the traditional Russian dressing for a somewhat lighter sandwich with a little more pungency. Where it really has shined has been as an ingredient in wet rubs for pork and lamb and mixed into the meat mixture for stuffed cabbages.
