I really like the 22 gauge steel----you can feel the difference next to 20 gauge steel. The finish is satiny, so no chrome to polish. I find it really convenient that you can cook in these if you need to, so if youre doing a pan of beans or potatoes, no problem, just transfer it directly to your chafer. I might have overestimated the size of these; a 1/3 size pan holds 10 cups/83 oz/2.6 quarts, which means that's about ten 1-cup servings. I initually planned to use my chafer for mashed potatoes and figured a 1/3 size would be enough for a party of 9, just looking at the numbers. Certainly not. I'll need a 1/2 or 2/3, easily, given how shallow the pans are. The three pans I ordered were almost perfect----one of them has a gnarly metal burr on one corner, but other than that, they are of great quality.
