Amazing texture, flavor, and appearance. Be careful when cooking - easy to overcook and burn it. Experiment and then cook the same way every time. It's best when baked or pan fried. But I even like it microwaved (which is kinda sacrilegious, i know, but it's done in 30 secs..). Pretty oily. Store it flat so the oil doesn't collect at the bottom of the bag. You can pat off the excess oil after cooking and it still tastes great. Don't refrigerate.
