Though this plant-based butter can be swapped 1:1 for conventional dairy butter, it uses different fats and thus requires a few tweaks to your preparation techniques. Since it's made with cocoa butter, Tourlami butter performs best between 60 and 70 degrees Fahrenheit to keep it from firming up. When laminating, the butter is ready to use when it is pliable and the sheets can be bent to a 45 degree angle without breaking or tearing. This product firms up more quickly than dairy butter, so it performs best when used at a slightly warmer temperature than normal. When not in use, this butter can be stored under refrigeration. This product ships frozen, but it is not recommended to refreeze it for long-term storage after delivery.
