How Portion Scales Can Help You Control Portion Sizes

How Portion Scales Can Help You Control Portion Sizes

Portion control has been an often talked about topic in the food service industry for as long as I can remember. Every operator knows they should practice good portion control; every chain account that I’ve ever been in has procedures in place to make sure that things are getting measured. And yet so many operators still sacrifice consistency and throw their money away by not having a good portion control game plan in place for their enterprise. Hi, I’m Steve Ziegler, product expert at the WEBstaurant Store. Let me show you a few examples of how portion control can affect your business. The first thing I’d like to discuss is consistency. Not only can one person’s estimate of the right amount vary widely, but the problem only gets worse when you’re talking about more than one employee. For example, if I go into your sandwich shop and I receive this sandwich made by Joe, I’m probably going to be pretty happy. If later on I go in and get this sandwich made by Jack, not only am I going to be unhappy, but I’m probably going to complain about it. And the sad thing is, if this meat had been split evenly between these two sandwiches by using a scale, I probably would have been a very happy customer. So portion control is an important part of customer satisfaction. Next, and even more importantly, by not having portion control in place, you’re slowly robbing yourself blind. Here, let me show you. You see these two sandwiches being prepared here, I measured this one with 3 ounces of ham. This one I just eyeballed, and it looks right, doesn’t it? I made lots of sandwiches in my time and I’m a good estimator. But just in case, let’s go ahead and measure the meat on this sandwich. Well, I was a little bit off, that’s 4 ounces right there. Even though it looked the same, it’s very easy to be off by a good bit. Three to four ounces, that’s one ounce off, that’s 1/16th of a pound, that ham cost me five dollars a pound, now let’s think about this a little more carefully. Now 1/16th of a pound times $5 a pound, were only losing $0.31 cents a sandwich. But I serve 30 sandwiches a day 6 days a week, 52 weeks a year, which brings me to the fact that by the end of the year I have managed to lose $2,901.60. That is money that I’ve worked for, now I’ll never recoup. But if you’re a better estimator than me, let’s say you’re only off by an 1/8th of an ounce. With this same ham, you’re only going to lose $362.70. Which is just fine, because your kids really didn’t want that PlayStation that badly anyhow. Every chain restaurant has a portion control program in place because they’ve studied it, and they know it’s worth the effort. So put that money in your pocket, show your staff this video, and begin your portion control program today.

Pizza Control Scale

Pizza Control Scale

Portion control is important to any restaurant and pizza shops are no exception. The Torrey PZC-5 Pizza Portion Control Scale with its portability, its ease of use and its convenient foot tare pedal it’s going to make that job quick and easy. Now let’s take a look at the use and function of the Torrey PZC-5 Pizza Scale. The first thing you’ll want to do when you get this home is you’ll want to plug it in using the AC adapter in order to recharge the battery. The AC adapter plugs right to the back of the control panel here and you can see what also is here is your cord for your foot pedal. You can plug those both in. The AC adapter, once you plug that in, it’ll take 10 hours to charge this thing and then, this unit will work for 12 hours afterwards. Now, you can go ahead and turn it on in that far right red key and it’ll go through a little countdown and it’ll come on. This button right here is the off button. Right here’s the backlight button and you can see the difference. It’s so nice that it has a backlight. There’s without and there’s with the backlight. And then you can change from kilograms to pounds to ounces on this. I like it in ounces, so I’m going to keep it there. We have the tare button right over here. You’re never going to use that when we have this nice foot pedal tare button. And I’m going to show you that. Let’s just go ahead and build a pizza with this unit and see how it works. First, I’ll start out by putting my pizza on the platform. You can put up to a 16” pizza right here. I’m using a 12” right now. I already portioned out my sauce on here by using a ladle and I have this thing on a screen. Now to zero this thing out so we can start building our pizza, I’m going to go ahead and hit the foot tare pedal and you can see that brings it right down to zero. Now, I want to add 4 ounces of cheese and I’m going to go ahead and start sprinkling on my cheese. We got 3, almost 3.5. There we go; we have 4 ounces of cheese on there. I have exactly the right amount of cheese. There’s no overage or underage. We’re going to have the correct amount of cheese on there so I’m going to hit my foot pedal to bring it back down to zero. Now, I want to add 1.5 ounces of pepperoni to this and you can see I’m going to go ahead and apply these pepperonis all over the place. We got 1 ounce and I’m going to almost be; there we go, 1.5 ounces of pepperoni. Now, I have perfectly portioned this pizza and I can go ahead and put it in the oven knowing that I didn’t lose any money, by adding anything extra, and I'm giving somebody a consistent product every time.

Rey Scale Tor Digital loved loves scales contact days light

Staff loved it when it was first purchased. Many compliments on flexibility and display showing ounces (example 4 pounds, 8 ounces) and decimal (4.5 pounds) was very helpful. Then it broke. Tor-Rey warranty service has been lousy. They agreed to send me a replacement part, and I have heard nothing. The unit still sits in my office. I do not hold Webstaurant responsible for the defect. Five star for the purchase, one star for the company's follow up, and buyer beware.

This Pizza Scale is of extremely very low quality. The Digital readout head is poorly attached. It should rotate back and forth BUT it also moves up and down as if it is ready to fall off due to the poor attachment system they use. The first Scale that I ordered malfunctioned within 7 days of light use. I attempted to contact Tor Rey via their website following their warranty process and they failed to contact me. It was only when I asked the Webstaurantstore to assist did Tor Rey finally acknowledge the return process. They had me return via UPS and sent me a new one. The replacement failed in exactly the same way as the first within 8 days of light use. I use many kinds of digital scales (many of them are several years old) in my bakery and I have never had one fail. In Summary I would encourage you to NOT purchase a Tor Rey scale for 2 reasons: 1. Very poor quality 2. Very poor to non-existent Customer Service from Tor Rey
