How Portion Scales Can Help You Control Portion Sizes

Portion control has been an often talked about topic in the food service industry for as long as I can remember. Every operator knows they should practice good portion control; every chain account that I’ve ever been in has procedures in place to make sure that things are getting measured. And yet so many operators still sacrifice consistency and throw their money away by not having a good portion control game plan in place for their enterprise. Hi, I’m Steve Ziegler, product expert at the WEBstaurant Store. Let me show you a few examples of how portion control can affect your business. The first thing I’d like to discuss is consistency. Not only can one person’s estimate of the right amount vary widely, but the problem only gets worse when you’re talking about more than one employee. For example, if I go into your sandwich shop and I receive this sandwich made by Joe, I’m probably going to be pretty happy. If later on I go in and get this sandwich made by Jack, not only am I going to be unhappy, but I’m probably going to complain about it. And the sad thing is, if this meat had been split evenly between these two sandwiches by using a scale, I probably would have been a very happy customer. So portion control is an important part of customer satisfaction. Next, and even more importantly, by not having portion control in place, you’re slowly robbing yourself blind. Here, let me show you. You see these two sandwiches being prepared here, I measured this one with 3 ounces of ham. This one I just eyeballed, and it looks right, doesn’t it? I made lots of sandwiches in my time and I’m a good estimator. But just in case, let’s go ahead and measure the meat on this sandwich. Well, I was a little bit off, that’s 4 ounces right there. Even though it looked the same, it’s very easy to be off by a good bit. Three to four ounces, that’s one ounce off, that’s 1/16th of a pound, that ham cost me five dollars a pound, now let’s think about this a little more carefully. Now 1/16th of a pound times $5 a pound, were only losing $0.31 cents a sandwich. But I serve 30 sandwiches a day 6 days a week, 52 weeks a year, which brings me to the fact that by the end of the year I have managed to lose $2,901.60. That is money that I’ve worked for, now I’ll never recoup. But if you’re a better estimator than me, let’s say you’re only off by an 1/8th of an ounce. With this same ham, you’re only going to lose $362.70. Which is just fine, because your kids really didn’t want that PlayStation that badly anyhow. Every chain restaurant has a portion control program in place because they’ve studied it, and they know it’s worth the effort. Today I’m going to take a few moments to show you some of the basic features, and the initial setup of these scales. When your Taylor mechanical scale arrives at your door, you’re going to want to let it come up to your indoor room temperature. Especially if it is hot or cold outside, and this is because these things are spring operated and springs change their shape with extreme heat or cold. When it is up to room temperature, the first thing you’ll do is align your rotating dial so the zero graduation sits right inside this triangular notch in the middle of the dial. Once it’s there, you’re going to take a weight (I’m just going to use some Regal sea salt) and place it on, let it come to a rest, take it off, and repeat this three times. Now that we’ve done that, we can look to see if this is precisely at zero. I can see it’s just a little bit off, so what I’m going to do is turn the unit around. You can see there is a brass knob there that you can turn back and forth in order to precisely tune your needle to zero. I’m going to do that right there, and there we have it! Now I’d like to show you the tear feature utilizing the rotating dial. The first thing we’ll do is put our container on the platform. You can see how the needles moved. I’m going to rotate the dial so zero lines up exactly with the needle. Next thing I’ll do is put my product in the container; in this case I have some tomatoes. Now you can see we have an accurate reading of just the tomatoes.

    This scale came in very handy for portioning food that is under 2 pounds. Very light weight so when its bumped it readjusts the weight on its own. Be careful with this one.

    This scale is garbage. One was defective and require immediate replacement. Other two I've had quickly became inaccurate and will not hold zero. Just spend a bit more and get a real scale, rather than this garbage.

    I use this scale everyday to weigh out my hand pressed burgers. It's easy to read, I also use a paper dish on top and just adjust the dial. The scale platform is not removable.

    This scale is an alright buy if you don't need to weigh many things throughout the day. With the amount of workload we placed on it, it unfortunately didn't hold up tremendously well. Though for smaller applications, I'm sure it is great.

    We bought this Tiny scale to weigh pizza dough. It lasted a day in our kitchen. Did not hold up well. The needle gives inconsistent reads on the same weight. You get a different measurement each time.

    This scale is very small and won't work for some applications but it's perfect for us. We use to as quality control to weigh out portion sizes for salads and sandwiches.

    Smaller than I expected. "Compact" is in the description but these are really small BUT still pack a punch, weighing up to 32 oz. which is great for most of our uses!!

    We have a couple of these Taylor scales in our kitchen as well as a couple of the digital TE10FT units. I tend to like the digital better because it's easier to clean and seems like it doesn't have to be calibrated as often.
