Sourced exclusively from the Cauca region of Colombia, Indestec is made with Castillo coffee beans that are grown at 2,050 meters above sea level. This coffee uses a unique anaerobic processing method; after the coffee beans are washed to remove the cherry, they are sealed in an oxygen-free chamber, where acidity and fermentation can be carefully controlled to highlight the flavor and character of the coffee. After processing, Steady State roasts the green coffee beans to a light roast level to promote sweetness and complexity in the cup. The final result is a creamy coffee with butterscotch, mint, and watermelon tasting notes and a silky mouthfeel. Indestec makes use of the remarkable washed anaerobic process to balance richness with delicate herbaceous notes and create a complex coffee with all-around crowd-pleasing potential!

This coffee's whole bean format allows for flexible preparation options to suit the needs of your establishment. For a perfect pour-over, grind the beans to a medium-fine consistency, then simply pour water 30 seconds off a boil (205 degrees Fahrenheit) over them. You can prepare this coffee in commercial brewers to create large batches, or offer it in an individual pour-over coffee maker for an individualized artisan experience. To truly highlight Indestec's creamy and complex palate, grind this coffee to an extra-fine consistency and use it to pull espresso shots or to make AeroPress coffee.
