Suggested Recipe: Easy Banana Bread

This recipe makes 1 loaf, or approximately 14 slices.

2 eggs
1 cup unsweetened applesauce
3 really ripe bananas, mashed (about 1 1/4 cup)
1/2 cup Splenda monk fruit sweetener
2 tsp. pure vanilla extract
2 cup all-purpose flour
2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
1/2 cup chopped walnuts

  1. Preheat oven to 350 degree Fahrenheit.
  2. In a small bowl, whisk together dry ingredients: flour, cinnamon, salt, baking powder, baking soda, and walnuts.
  3. In a medium bowl, beat eggs, applesauce, and mashed bananas with a whisk or a fork. Whisk in sweeter and vanilla. Gently add all of the dry ingredients, and using a spatula, stir just until combined, being careful not to over mix (batter will still be lumpy).
  4. Pour batter into a bread pan sprayed generously with nonstick cooking spray. Bake for 1 hour, or until a toothpick comes out clean in the middle.
  5. Remove from pan and let cool. Serve banana bread slices warm. Enjoy!
