Cut delicious strands of fresh, homemade pasta with this versatile Sirman Sinfonia 2 pasta machine! This machine produces up to 9 lb. of pasta per hour, making it ideal for medium-duty use in small- to medium-sized establishments. It has a powerful 1/2 hp, air-cooled motor with an oil bath gear box for smooth, efficient operation. The forced air-cooling system allows it to withstand heavy-duty applications. This user-friendly model features an IP67-protected stainless steel keypad and a rotary cam switch for forward or reverse operation. Plus, you can create a wide variety of pasta shapes using the compatible pasta dies (sold separately).
This pasta machine includes a 6 qt. bowl, a high-performance kneading paddle, and a convenient funnel to add liquid ingredients during processing. Both the kneading paddle and funnel are removable for cleaning. This unit is made with a durable AISI 304 stainless steel body, an anodized aluminum hopper, and a stainless steel worm, head, and ring. The bowl quickly disassembles and removes to simplify cleaning. An interlocking stainless steel lid, overload protection, and no-voltage release protect both the machine and operator. A 120V electrical connection is required for operation.

We sprung for the Concerto 5 after outgrowing our small Chinese-made roller. An extruder seemed like the natural next step, and this one ticked lots of boxes: a decent production capacity, lots of available dies, manufactured by a fairly reputable Italian company, and a fair price. It drop-shipped direct from Sirman's Chicago warehouse within a few days of ordering, and arrived about a week later by FedEx Freight on a pallet. The machine came with VERY little in the way of instructions: the English-language manual available online is basic, and super skimpy on details like how to properly assemble, disassemble, and clean it. Fortunately, it's got a fairly intuitive design and construction, and we were up and running with it within a few hours. We have had to learn some things by trial and error, but overall it's been a really solid workhorse for us over the past six-ish months. Seems like a great solution for a medium-to-large restaurant or a small local manufacturer.
