I chose this because of the NSF rating. Santoprene handle is comfortable and the back of the blade is rounded off, not sharp. It was sharp straight out of the package. The blade has been easy to care for by washing with hot water, soap and drying with a towel. I use a Mercer blade guard to protect the edge. I occasionally touch up the edge on the Mercer sharpening steel I also bought.
