Mercer culinary Kau Kung Chopper / Cleaver It features a 7.1 inch blade, and high carbon German X50 Steel. This is the same steel that they use in their line of chef knives. This is not a vegetable slicer. This is more of a meat or chicken, poultry, duck fish chopper. But would also work admirably at chopping tough, rooted vegetables, and squash. I also own the vegetable slicer which in appearance looks like a cleaver, but is not. This knife is a cleaver or chopper. It will cut through poultry and duck bones effortlessly. The blade on this knife is at least twice as thick as the blade on the similar vegetable slicer that Mercer has in their collection. I do recommend this knife.
