The high quality unlined solid copper body creates controlled, even heat to perfectly caramelize sugar without clumping. It also easily melts heat sensitive chocolate, while avoiding over crystallization without troublesome hot spots.
Its 3.5 qt. size is great for making candies and caramels. Each sugar pan comes with a stainless steel "cold touch" handle as well. Since stainless steel heats up slower than copper, the handle protects the user's hands from burns.
