Though you can nibble the meaty, chewy tamarind fruit directly off of the seeds, tamarind is most commonly made into a paste before use in order to make it a more versatile ingredient. To prepare tamarind paste, begin by crushing the hard shells and peeling them away from the tamarind fruit. Once your tamarind pods have been peeled, add them to a large bowl and pour in enough water to barely cover them, then soak for 20 minutes. After your tamarind has soaked and softened, use your hands to vigorously massage the fruit in order to remove the seeds and tough fibers. Place your massaged tamarind in a large mesh strainer over a bowl and use your hands to press the softened fruit through. The tamarind paste will fall into the bowl below and the tough fibers and seeds will be left behind. Now your tamarind paste is ready to use!
