Optimize your back-of-house operations with this Hoshizaki refrigerated pizza prep table! Whether you need to outfit a university cafeteria, pizza parlor, or Italian restaurant, this unit will streamline the pizza prep process. This pizza unit's top rail accommodates up to (8) 1/3 size food pans, and it comes with a set of plastic pans to get you started. Plus, the two lift-up lids let you cover the pan rail to maintain proper food-safe temperatures and prevent contamination. The adjustable airflow lets you increase or decrease airflow to the pan rail to maximize performance. A full-length, 19" deep cutting board is mounted to the table surface to provide a place for slicing ingredients and assembling pies.

The refrigerated base cabinet is great for storing back-up ingredients like sauce, dough, and pepperoni, as well as toppings that you do not use as frequently. The cabinet has four adjustable epoxy-coated shelves (two per section) to help you organize your supplies and two swinging doors with aluminum flush mount handles for easy access. Each field reversible door features a removable magnetic gasket, a self-closing design with a stay open feature for ease of use, and an exclusive stepped design along the edge of the door to protect the gasket from damage. The Night/Day Mode feature drops the set point to keep the food cool in the rail when the lid is open and returns the set point to normal when the lid is closed to keep food from freezing and conserve energy.

Designed to take the beating of a commercial environment, this prep table has a durable stainless steel exterior front, sides, and top, and a stainless steel interior. Not only does the stainless steel construction look great in your prep area, but it is also easy to clean and resists corrosion for a long product life. The walls and doors feature 2" of foamed-in-place insulation to help maintain safe temperatures and add rigidity to the cabinet. The four 6" casters, two with brakes, aid in maneuverability and make the unit easy to move for cleaning.

This model's 1/3 hp refrigeration system uses eco-friendly R-290 refrigerant and a dual controller system to maintain food-safe temperatures in the cabinet and pan rail. This specialized refrigerant has an ozone depletion potential (ODP) of 0 and a global warming potential (GWP) of 3. Plus, the evaporator coils are e-coated to help prevent corrosion! The solid state digital controller offers an LED display so you can keep an eye on your unit's performance, and it also has a temperature alarm to let you know if something is wrong. This model is engineered to maintain NSF-7 temperatures in 100 degree Fahrenheit ambient temperatures. This prep table requires a 115V electrical connection for operation.

I haven’t heard of R-290, R-600a, R-513a, or R-448A refrigerant before. What is it?

R-290 (also known as high purity propane or CARE 40) and R-600a (also known as refrigerant grade Isobutane or CARE 10) are hydrocarbon refrigerants. R513a (also known as Opteon XP10) and R-448A (also known as Solstice N40) are HFO (hydrofluoroolefin) refrigerants. They are being used by some manufacturers in response to the EPA’s Significant New Alternatives Policy (SNAP) Program.

What kinds of pans can I use in my refrigerated prep table?

While various configurations combining traditional 1/3 size, 1/6 size, and other food pan sizes are possible, it's important to refer to your equipment's Specification Sheet and/or Owner's Manual to see what pan sizes and configurations are recommended. Certain accessories may be needed in order to use pans of a different size than what is recommended. It is also important to note that mixing and matching pans from different manufacturers may result in the pans not fitting properly.
