Hobart Salad Dryer

Hobart Salad Dryer

As Americans continue to eat healthier, more local, and more organic foods, vegetables are an increasingly important part of the menu. Vegetables must be prepared as carefully and expertly as every other item on your menu. And that includes one of America's most popular vegetables--lettuce. A Hobart salad dryer can help you quickly and easily create fresh, crisp, and tasty lettuce, while improving your kitchen's profitability.

Crisping lettuce is a best practice used by top kitchens. The process re-hydrates lettuce, resulting in better taste and appeal. A salad dryer can play an important role in the crisping process, and its one reason why the Hobart salad dryer is the smartest choice for your kitchen.

During the crisping process, lettuce typically soaks in a ice bath for several minutes to plump it up. Once the lettuce is re-hydrated, it must be dried to remove excess water to prevent wilting and spoilage. Operating at more than 400 RPM, the Hobart salad dryer gently spins away the excess water that can cause spoilage, without damaging or bruising salad greens. Besides providing the perfect finishing touch to the crisping process, the Hobart salad dryer can even reduce your salad dressing cost by as much as 15%. Here's how:

Here are some greens that have not been put through a Hobart salad dryer. Let's add some salad dressing. See how the dressing runs because its diluted by the water left on the lettuce? Now let's take this freshly washed and soaked lettuce for a gentle spin in the Hobart salad dryer. The amount of water removed in just a 2 or 3 minute cycle is quite dramatic. Now just lift out the much lighter, dryer, and fluffier basket of lettuce. And let's do that dressing test again. Notice that the dressing is nice and thick, not watered down, not running all over the place. With dry lettuce, customers use less dressing than with wet lettuce. In addition to reducing your dressing costs, don't forget that the Hobart salad dryer can add up to 3 days to the shelf life of your greens. And, it can make your portions look bigger by removing excess moisture.

With a capacity of up to a case of lettuce, 16 heads, or 18 lbs. of bagged salad, the Hobart salad dryer enables you to serve up to 80 fresh, crisp, and tasty salads. Featuring a fully sealed, reinforced base, a fully sealed motor with stainless steel splash guard, and a heavy-duty spin basket with extra large capacity for longer motor life, the Hobart salad dryer is built to help you gently save money, spin after spin, for years to come.

Standard equipment is many of the largest chain restaurants, Hobart salad dryers are an important profit center. Now you can easily make it one for you too. Hobart, proud supporter of you.

Hobart SDPE and SDPS Salad Dryers

Hobart SDPE and SDPS Salad Dryers

This program is to assist operators in the use of the Hobart Model SDPE and SDPS salad dryers. It is intended as a supplement to the instruction manual provided with the salad dryer. Welcome to the Hobart salad dryer operator training video for models SDPE and SDPS. For this video, we will be using SDPS. The Hobart salad dryer is designed to dry large amounts of lettuce within minutes, extending the shelf life of the lettuce. And, providing a fresh, crisp appearance. Operation. warning, moving parts, keep hands, clothing, and utensils out while in operation. Always wash, rinse, and sanitize the salad dryer as required by local regulation and after being idle for an extended period of time. Place the salad dryer on an even surface near a floor drain. Or, place a 2 gallon capacity container under the drain tube. Secure the unit in place by pressing the brake pedals on each caster. Next, remove the lid cover by lifting one side off for easy removal. Do not pull or force the lid cover off in a quick motion. A white polyethylene inner lid is attached to the lid cover. Hang the lid cover on the salad dryer tub using the hook provided on the lid cover. Remove the spin basket from the salad dryer tub and place the spin basket in the sink. Load lettuce leaves into the washed, rinsed, and sanitized spin basket. Do not fill the basket above the handle holes. Rinse lettuce and let excess water drain from the spin basket prior to loading the spin basket back into the salad dryer tub. Notice, do not overload the spin basket. Overloading will cause lid and motor failure. Best results are achieved by filling the spin basket 3/4 full. For shredded lettuce, cabbage, and denser product, like Romaine, the load may need to be reduced to half full so as to not overload the unit. Place the loaded basket back into the salad dryer tub, ensuring the octagon shaped recess of of the spin basket lines up with the metal octagon driver in the salad dryer. Make sure that the T handle that secures the white polyethylene inner lid to the lid cover is tight before each use. Place the lid cover on the salad dryer, making sure it sits flush on top of the tub. The white polyethylene lid attached to the inside of the lid cover is designed to hold the spin basket in the center of the salad dryer. Proper alignment will keep the salad dryer balanced, and vibration-free. Overloading will prevent the lid from lining up properly with the spin basket, and will cause the salad dryer to vibrate. Prior to turning the machine on, make sure that the unit's drain tube is placed near the floor drain or over a 2 gallon capacity container. Turn the salad dryer on by rotating the knob on the timer clockwise, using a 1-5 minute cycle. The salad dryer will turn off automatically. Generally, a 2-3 minute cycle is sufficient to dry a full load. When the timer cycle has ended, wait for the spin basket to stop rotating before removing the lid cover. Remove the spin basket from the salad dryer tub. For a high volume operation, a second spin basket is recommended. The second basket can be filled with lettuce while the first basket is operating inside the salad dryer. Cleaning. Warning. Turn the machine off and unplug the electrical cord before cleaning. The salad dryer must be thoroughly washed, rinsed, and sanitized as required by local regulation and after being idle for an extended period of time. Notice. Do not spray water towards the bottom and motor area of the salad dryer. This may cause damage to the motor assembly and electrical parts. To clean the unit, start with the interior surface of the tank. Remove the remaining food debris with a sponge. Wash the interior of the salad dryer with a clean towel soaked in detergent solution and warm water. Rinse, using a fresh towel and clean water. Apply sanitizer and allow to air dry before placing on the lid cover. For the SDPS model, use detergent and sanitizing solutions designed for stainless steel surfaces in contact with food. For the SDPE model, use detergent and sanitizing solutions designed for plastic materials in contact with food. To clean the exterior of the tank, use a clean, damp towel to wipe the wash solution from the surface. Allow to air dry. Any commercial stainless steel polish can be used to shine clean surfaces on the SDPS model. To clean the spin basket and lid, wash in warm detergent designed for use with plastic materials in contact with food. Rinse with clean water, apply sanitizer, and allow to air dry. Notice. Never steam clean the spin basket or lid cover. Maintenance and trouble shooting. Warning. Turn the machine off and unplug the electrical cord before doing any maintenance. Routinely inspect the unit to ensure any debris isn't clogging the drain tube. Contact your local Hobart-authorized service center for any repairs or adjustments needed on this unit. For a troubleshooting guide, consult your operator's manual. This has been the operator training video for the Hobart salad dryer.
