I'm concerned that the plates and knives I have won't work with this hub. Is there a way I can be sure they will fit?
Measure the square hole in your plate or knife. A standard #12 hub fits plates and knives with a 9/16" square hole, while a standard #22 hub fits plates and knives with a 3/4" square hole.

Easily cut and mix bulk ingredients with Hobart's Buffalo chopper! It's easy to use, clean, and maintain. Plus, it incorporates innovative devices to ensure superior safety of the operator while in use.

One of the hardest working electric machines in any restaurant kitchen is the food processor. From cutting butter into pastry dough to dicing tomatoes for salsa, these versatile machines are great labor-savers. But, which processor is right for your restaurant? The first thing to think about when selecting a food processor is what processing tasks you need to perform. If you're primarily chopping, kneading, and pureeing food, with occasional small batches of grating, slicing, and shredding, a batch bowl processor is what you'll need. If your main use is vegetable preparation, or shredding cheese, a continuous feed processor is what you'll want to purchase. And if you need maximum versatility, you can buy processors with both a batch bowl and a continuous feed head. Make sure you check into the blades and discs that come with your processor, or are available for purchase later. Some manufacturers have a broad range of discs to serve almost any processing need and others just have a few. When shopping for processors on our site, you'll find information on what blades come with a processor in the description, and you'll find other discs available in the companion items. The next thing you'll need to consider is how much you will be using the machine. Batch bowl processors come in sizes from 3/4 qt. all the way up to 20 qt., but even processors with similar batch bowl sizes can vary in utility. Check out the horsepower ratings and compare the build of the units. Units with higher horsepower and heavier-built units are preferred for long running times and more difficult tasks like shredding cheese. If salsa is your signature item and you're dicing vegetables several hours a day, a heavy base, high horsepower continuous feed machine is going to be your best choice. Also, when considering vegetable prep processors, consider the size of the chute. Some have smaller chutes and some larger units will allow you to shred entire heads of cabbage all at once. The following operator training video on the 14" and 18" food cutters is a supplement to the instruction manual that came with your food cutter. If you have questions concerning operation, please consult your manual. Your Hobart food cutter is constructed and designed to give long, satisfactory service, providing it is properly used and maintained. This training video will cover operation, cleaning, and maintenance of the food cutter. The Hobart food cutter is designed to cut and mix a wide variety of products. With products in the rotating stainless steel bowl, rotating knives cut and mix them inside the bowl cover. Model 84186 is furnished with a number 12 attachment up. Various attachments are available for this model. For more information on installation and operation of attachment, consult your instruction manual. Safety devices incorporated in this machine must be in their correct operating position anytime the food cutter is in use. The hand knob must be tightened snugly against the knife unit. The comb must be positioned on the locking adapter. The bowl cover must be closed over the bowl and securely locked by pressing down on the locking handle and turning it 90 degrees. The start/stop switch which controls power to the food cutter and the bowl cover are mechanically interlocked. The switch can't be pulled to the on position unless the bowl cover is locked in place, and with the switch in the on position, the bowl cover can't be unlocked. Always unplug the power cord before cleaning or moving the food cutter. Start the machine by pulling the start/stop switch. Feed the product directly into the bowl as it rotates. The bowl cover is shaped to turn and mix products as the bowl rotates. Warning: hands must never be inserted under the bowl cover during operation of the machine, as sharp rotating knives are located under the bowl cover. If additional mixing is desired, use a spatula or similar utensil to turn the product as it rotates past the bowl opening. To unload the bowl, use a spatula to scrape the product into a bowl or pan from the bowl opening. This may be done while the bowl rotates, or you may turn the machine on and off to rotate the product to the bowl opening. Warning: unplug the power cord before cleaning the food cutter. The food cutter should be wiped with a clean, damp cloth and dried daily. The bowl, knives and attachments, if any, should be removed and washed after each use. Unlock and raise the bowl cover. Remove the comb. Carefully turn the knife shaft so the knives are in a horizontal position. Remove the hand knob and carefully slide the knife unit off of the shaft. Warning: knives are sharp. Exercise extreme caution when handling knives. Remove the bowl by rotating it clockwise to its stop and lifting it from the bowl support. Thoroughly wash and rinse these items in a sink. The knife unit shouldn't be disassembled for cleaning. Reassembly is the reversal of the disassembly. When reinstalling the knife unit, make sure the slot in the knife hob is mated to the notch in the knife shaft and the hand knob is tightened securely. Warning: unplug the machine power cord before beginning any maintenance procedure. The motor has grease-packed bearings and requires no lubrication maintenance. The attachment hub gear case on the model 84186 only and the bowl drive gear case on all models should be checked occasionally. Contact your local Hobart service office. Warning: knives are sharp. Exercise extreme caution when handling knives. The cords between either knife and bowl should be ten thousand to fifty thousandths of an inch. To check the clearance or make an adjustment, unplug the power cord. Unlock and raise the bowl cover and remove the comb. With the knives in a vertical position, check each knife individually at several points around the bowl. If an adjustment is required, loosen the hand knob but do not remove it from the shaft. Hold a one and seven sixteenths inch open hand wrench on the knife retaining bushing and loosen the locking collar with a second wrench. Gently tap the heal of the knife until proper clearance is reached. If clearance is too small, pull the knife upward and repeat the procedure. Adjust the clearance of the second knife as necessary. Retighten the locking collar and the hand knob. It's very important to check the clearance of each knife at several points around the bowl before running the machine after an adjustment. To sharpen knives, remove the unit from its shaft by removing the hand knob. It's not necessary to disassemble the knife unit. Use an ordinary carbon ended stone to sharpen the knives.
