Your patrons will surely notice the difference in taste and texture, and will appreciate the fresher alternative to boxed pasta. Fresh pasta also cooks in about half the time as dried pasta does, which means faster turn-around on made to order entrees and quicker overall service.

Capable of producing up to 88 lb. of pasta per hour, this unit is a workhorse and eliminates most of the labor intensiveness of making fresh pasta, while yielding the same homemade tasting final product. Just simply place your wet and dry ingredients into the hopper, that with dual tank capacity is capable of holding as much as 44 lb. of ingredients, and the internal mixer and kneader will take care of the rest. When it is to the proper consistency the dough will be extruded into perfectly shaped and sized pasta. Motorized knives will determine the length of each piece of pasta and can be altered by a switch on the control panel, according to what style of pasta you are making.

For creating specific pasta shapes, dies (sold separately) can be attached to the machine for creating just about any sized and shaped style of pasta you can imagine. A cooling system on the extrusion sleeve makes sure that the dough does not get too warm, as dough that experiences high temperatures tends to discolor. For dough that is too wet and sticky, a built in fan will lower the moisture level and give a more dry, workable dough consistency. The included trolley with casters make this unit mobile and can be moved around with ease. For safety, a front panel kill switch will immediately cut the power to the motor as necessary. A 208V, 3 phase electrical connection is required for operation of this unit.
