We’re going to show you how to make evenly-extracted cups of espresso.  For the best-tasting espresso, use a conical burr grinder and grind your coffee beans to a fine consistency. They should feel like powder between your fingers.     Dispense the coffee into your portafilter. Next, tamp your coffee grounds. If you’re an espresso novice, you may want to use an espresso pod.     Next, lock your portafilter into your group head and start pulling your shot of espresso. Your shot will begin with a slow drip before turning into a steady stream. Now you have an evenly-extracted shot of espresso to use as the base for lattes, cappuccinos, or to enjoy on its own.

Perfectly grind your espresso with the help of the Estella Caffe espresso grinder! First, fill the hopper with whole espresso beans and secure the lid. Choose from one of the eight precision grind settings. Open the slide to allow beans to fall into the grinder. Then, turn the grinder on to begin grinding. Once you have filled the doser with grounds, turn off the grinder. Place your portafilter under the doser and pull the lever to dispense the perfect amount of grounds. Then, all you need to do is use the included tamper and you're ready to start pulling your shot of espresso!

Hi I'm Sarah Shirk, Green Coffee Buyer for Square One Coffee. Square One is an award-winning specialty coffee roaster based in Lancaster, Pennsylvania. Today, I'm here to show you how to do latte art. As your shot of espresso is pulling, purge the steam wand, and start steaming your milk. Begin by aerating the milk, which creates the tight, creamy micro-foam that you can use to pour latte art on top of your drink. Swirl the milk to integrate the foam with the milk. Start pouring high to sink the heavier milk under the crema of the espresso. Lower your pitcher to the cup when you want to begin pouring your design. A rosetta is created in one single pour using your wrist to create the leaves. A tulip is created with multiple pours in quick succession, stacking the layers on top of one another in the cup. Follow these steps to make sure your Estella espresso machine is setup and cared for properly. Once your machine has been installed by a qualified technician, turn the switch from 0 to 1. The unit will start filling its boiler with water. When the pump pressure gauge reaches 1.2 and the steam pressure gauge is in the green zone, the heating process is completed. Next, you will need to program your machine. Turn the output volume setting switch on. The first four buttons will light up and the fifth will flash. To program the first button, press and hold to begin recording the amount of water you want it to dispense. When the water level reaches your desired amount, release the button and the setting will be saved. After this, the first button will no longer light up. Repeat these steps for the remaining buttons. You do not need to program the fifth, flashing button. For machines with multiple brewing groups, the settings on the right side of the unit will automatically be copied to the other brewing groups. When you're finished, turn the settings switch off. Your espresso machine is now set up and ready to be used. At the end of each day, you will need to clean your machine. Rinse the reverse flushing silica plate in water. Place the silica plate in the portafilter, add cleaning powder, and attach it to the machine. Next, press the first and fifth button to start the auto-backwashing process. Once the backwashing has finished, move the portafilter and silica plate, and hold the fifth button and run water to clean the portafilter. Do this until the water is clear. Your machine is now properly cleaned. After you've cleaned your machine, you're ready to turn off the machine. To do this, turn the power off. Make sure to remove all liquids and solids from the water tray. Next, open the steam knobs to release steam from the machine. Once steam no longer comes out of the wands, close the knobs and give the unit one final wipe. By following these steps, you'll ensure your espresso machine is being properly cared for and will continue to pull the finest shots of espresso!
