Perfect for producing consistent, airy pizza crusts, the Dough Xpress DMS-18 will help you achieve 18" crusts with a texture similar to hand tossed dough! The DMS-18 eliminates the need for messy flour, and its easy-to-use operation is safe to use for unskilled labor. Unlike dough rollers that require two passes through the equipment, the DMS-18 requires only a single press for faster production - resulting in a texture similar to hand tossed.

This swing-away manual dough press features adjustable thickness control up to 7/8", calibrated temperature controls to 200 degrees Fahrenheit and LED indicating when the set temperature has been reached. This press can produce up to 400 pizzas per hour. The DoughXpress DMS-18 manual dough press requires a 120V electrical connection.

Bought this for our store and wasn't working for us. It puts holes and it crinkle too, as much as we tried different kind of dough (yest or no yest, high gluten or just regular all purpose flour) we brought in 2 respected pizza chef to make the dough still put a hole in it... it is good only if the pie is 6" to 9" anything more than that it break up when you lift from the platen... Any tips would be great.

For warm dough, the temperature should be set to 110 degrees F. For cold, refrigerated dough, we suggest raising the temperature to 150 degrees F.
