Simply season the pan before using it for the first time and it will gradually become more seasoned and develop non-stick properties after each and every use. It works with any type of cooking surface, except induction, and also features a secure and sturdy, welded French steel handle with a hanging hole for easy organization and storage. Just make sure to only hand wash this pan by deglazing, rinsing under warm water, drying, and finally lightly oiling it before its next use.

Versatile and built to last, de Buyer's La Lyonnaise line is made from durable blue carbon steel, a 100% natural blend of iron and carbon that's blued with a heat treatment to prevent oxidation. Lighter and thinner than cast carbon steel or stainless steel, its slightly rounded sides make this collection absolutely perfect for easily flipping foods, as well as browning, simmering, and reheating. Not to mention, its sturdy construction also allows for quick and even heating, as well as excellent caramelization during cooking.

Can I use a lid on my de Buyer carbon steel cookware?

We don't recommend using a lid with these items as it will steam and can cause a metallic taste to infuse the food.

How is the top diameter measured in frying pans and woks, and how accurate is this measurement?

The top diameter is the measurement across the pan, from the interior of one side of the rim to the other. These measurements are approximate because many frying pans and woks have a curved upper rim, making precise measurement difficult. The standard naming convention uses top diameter, so while multiple brands may offer a 10" pan, there may be slight variations in size between each brand's 10" pan or wok.

What is the best oil to season this pan with?

For optimum results, we recommend using an oil with a high smoking point such as grapeseed, peanut, canola, sunflower, or avocado oil.

What's the difference between a riveted and a welded handle?

A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.

When and how do I re-season my de Buyer pan?

You may need to re-season your pan if you tarnish the initial seasoning by using a harsh detergent when washing and / or by cooking acidic food in the pan. Simply hand wash the pan properly and then re-season the same way as you did initially.
