It also comes with an install kit, which includes mortar, an insulating blanket, insulating boards, an anchor plate, and a steel plate to help you complete your setup. So you can get started cooking right away, the kit includes an accessory package with a cleaning brush and infrared thermometer. Since this model is wood-fired, it brings the unique flavor profile and visual appeal of a live flame to your establishment. The oven is crafted from commercial-grade refractory cement that stands up to high heat, and it is reinforced with alumina, silica, and stainless steel fibers to provide structural integrity and longevity. With its signature FlameRoll effect, it can produce high, even temperatures up to 1,000 degrees Fahrenheit. The large 53" x 39" cooking surface allows you to cook a variety of dishes in a single oven, while the insulating door helps retain heat when cooking. For secure installation, this unit must be installed on a 4" thick, level, steel-reinforced concrete slab (sold separately). When properly installed, this unit offers full compliance with UL 2162 and ULC C2162 standards.
