Portion control has been an often talked about topic in the food service industry for as long as I can remember. Every operator knows they should practice good portion control; every chain account that I’ve ever been in has procedures in place to make sure that things are getting measured. And yet so many operators still sacrifice consistency and throw their money away by not having a good portion control game plan in place for their enterprise. Hi, I’m Steve Ziegler, product expert at the WEBstaurant Store. Let me show you a few examples of how portion control can affect your business. The first thing I’d like to discuss is consistency. Not only can one person’s estimate of the right amount vary widely, but the problem only gets worse when you’re talking about more than one employee. For example, if I go into your sandwich shop and I receive this sandwich made by Joe, I’m probably going to be pretty happy. If later on I go in and get this sandwich made by Jack, not only am I going to be unhappy, but I’m probably going to complain about it. And the sad thing is, if this meat had been split evenly between these two sandwiches by using a scale, I probably would have been a very happy customer. So portion control is an important part of customer satisfaction. Next, and even more importantly, by not having portion control in place, you’re slowly robbing yourself blind. Here, let me show you. You see these two sandwiches being prepared here, I measured this one with 3 ounces of ham. This one I just eyeballed, and it looks right, doesn’t it? I made lots of sandwiches in my time and I’m a good estimator. But just in case, let’s go ahead and measure the meat on this sandwich. Well, I was a little bit off, that’s 4 ounces right there. Even though it looked the same, it’s very easy to be off by a good bit. Three to four ounces, that’s one ounce off, that’s 1/16th of a pound, that ham cost me five dollars a pound, now let’s think about this a little more carefully. Now 1/16th of a pound times $5 a pound, were only losing $0.31 cents a sandwich. But I serve 30 sandwiches a day 6 days a week, 52 weeks a year, which brings me to the fact that by the end of the year I have managed to lose $2,901.60. That is money that I’ve worked for, now I’ll never recoup. But if you’re a better estimator than me, let’s say you’re only off by an 1/8th of an ounce. With this same ham, you’re only going to lose $362.70. Which is just fine, because your kids really didn’t want that PlayStation that badly anyhow. Every chain restaurant has a portion control program in place because they’ve studied it, and they know it’s worth the effort. Counting parts that are tiny and lightweight can be a time consuming ordeal that is susceptible to human error. However, using Cardinal Scale's C Series counting scale with preset weight and quantity limits can eliminate those issues. The C Series digital counting scale is perfect for inventory, packaging, and other counting needs. To begin using the C Series scale, turn the on switch forward that is located on the bottom right hand side of the scale. To enter a sample weight, simply enter the piece weight using the numeric keypad and press the sample weight key. The scale is now ready for bulk weighing. If you do not know the per-sample weight, simply place the sample on the scale platform, enter the amount of pieces in the sample, and press the sample size key. Now the scale is ready for bulk weighing based on your sample size entry. The scale can store quantity or weight limit preset high limit values. Simply press the count preset key and using the numeric key pad, enter either the quantity or weight preset high limit. Then, press either the sample weight key for setting the weight preset, or the sample size key for setting the quantity preset. Then, press the count preset key to return to weight mode. If sample weights have been entered and the weight on the scale exceeds either the quantity or weight limit, the scale will beep and display an alert. To clear the preset, simply press count preset key and enter zero value for either the quantity or weight preset. Then, press the count preset key to return to weight mode. With the scale in weight mode and displaying a zero weight, place the item on the scale platform. Press the M+ key to add the value of the weight accumulator. The display will change to show the accumulator values and the add announciater will be illuminated to indicate the addition has taken place. After three seconds, the scale will return to normal weight mode. Repeat the process to add additional sample weights to the accumulated weights. To view the total accumulated weight, press the M+ key while the scale is displaying a zero weight. To reset the accumulator to zero, simply press the MC key. To program weights and counts into the scale, begin by pressing the PGM key. Then, enter the PLU number either using the nine direct PLU quick keys or any two digit PLU between 10 and 99 and press enter. Using the numeric key pad, enter the average piece weight and press enter. The next display will allow a tare weight to be entered or press the enter key to accept zero for the tare weight. Now you may program subsequent PLUs or exit by pressing the PGM key again. To recall any stored PLU number, simply enter the PLU using P1 through P9 or the P# key and number. Then, press the enter key. The recalled PLU and average piece weight will display along with the associated tare weight. Add the pieces to be weighed and the total weight and count will be displayed. Press the C key to complete the counting operation and return to normal weight mode.
