Bob's Red Mill: Honey Whole Wheat Popovers

Hey, Chef Billy Pareesi here with Bob's Red Mill. Thanks so much for stopping by! Today I've got an awesome holiday recipe that you're going to love! We're gonna make honey whole wheat popovers and top it off with a parmesan herb butter. this recipe is incredibly easy and I guarantee your family and guests are going to absolutely love it. What we need to do though is put these popover pans in the oven. If you don't have popover pans you can absolutely use muffin pans. Put them in the oven, get them nice and hot then go back over to where you're prepping and we need to make the batter. We're going to start by pouring 7eggs in a very large bowl. Next we've got 4 tbsp melted butter, followed up with 1 1/2 cups whole milk. Last but not least, we are going to add 3 tbsp of honey for sweetness. You want to whisk this together until it's completely combined. You may see some cold butter clumps in there. Totally cool - do not get worried about that. Now for the dry ingredients - i'm going to be using 1 3/4" Bob's Red Mill whole wheat flour - it's such a fantastic, all around flour. 100% whole wheat - you're absolutely going to love it. Add it to a bowl, and we're also going to cut it with 1 cup of Bob's Red Mill all purpose flour. Add some of that to a bowl, plus a pinch of salt.Whisk that until all the flour are combined. And now what we need to do is combine the wet ingredients to the dry ingredients. So go ahead and pour that wet honey mixture right into the bowl of dry ingredients. Once it is in there, use your whisk and whisk it together until it is completely combined - make sure there are no flour chunks or anything like that. Now go back over to the oven,. pull those hot pop over tins right out using a measuring cup just evenly distribute the batter in between the pop over tins. Once they are about 3/4 of the way full, we're good to go back into the oven. 425 degrees Fahrenheit and it's going to takle between 27-30 minutes or until the're completely golden brown and they're about 3-4" taller than the pop over tin. This is a great timing because as our popover are in the oven, we can make that herb butter. So go ahead and add 1 stick of softened, unsalted butter to a bowl. Next we're going to add in 3 tbsp grated parmesan cheese and follow it up with 1 tbsp chopped chives, 1 tbsp parsley, 1 tbsp fresh chopped thyme, mix that together until it is completely combined. Set it to the side and go hang out for a few minutes until our pop overs are done. The pop-overs are finished so let's take a look. As you can see the popovers are completely golden brown coming out way over the top of that popover tin. They look amazing so let's give them a try. These pop-overs look wonderful and just in case you're wondering, parmesan and honey go great together, that's why i used that combination in the butter. I can't wait to try it. let's give it the old bite real quick. S MMMM, super fluffy with a nice crispy edge and you get that parmesan from the butter going wonderful with the sweetness of the honey.     This flour has a high level of germ and bran, so it tastes very hearty compared to cheaper steel-ground whole wheat flours. It makes breads that taste nutty, dark, and a little sweet. Loaves with this flour do not rise quite as high, and they are a little more dense, but they make up for it in flavor.
