This flour has a high level of germ and bran, so it tastes very hearty compared to cheaper steel-ground whole wheat flours. It makes breads that taste nutty, dark, and a little sweet. Loaves with this flour do not rise quite as high, and they are a little more dense, but they make up for it in flavor.
