Great little picture guide. I teach a condenses culinary class in the prison system, piping always consumed too much time with the trial and error method I used to use. this has cut it down and simplified. Bought 10 of these books, each student can put parchment or saran over the page to practice replicating the different techniques on, this has been invaluable in teaching and has built a lot of confidence in this section of my course.
