This durable American Metalcraft 12" black carbon steel fry pan BSFP12 with 1/8" thickness is ideal for preparing meals either at home or in your establishment. The dark color and low percentage carbon are designed to quickly absorb heat to ensure an even, consistent cooking process. With natural, non-coated steel, this pan gains non-stick properties once it's seasoned. To season the pan, simply wipe the interior with a flavorless cooking oil and heat up the pan until the oil is hot. Then remove the pan from the burner to cool, and repeat this process twice to allow the pan to gain natural non-stick properties. This prevents premature wear and tear and allows for easy cleanup. Afterwards, hand-wash in hot water with a mild detergent and dry the pan to ensure longevity.

With a riveted handle that connects at three points, this pan is ideal for active cooking. This allows you to comfortably move your cookware as you saute vegetables, seafood, or other products. The hanging hole in the handle also allows for easy, convenient storage. While designed for sauteing, this pan is also perfect for browning, searing, or frying. How is the top diameter measured in frying pans and woks, and how accurate is this measurement?

The top diameter is the measurement across the pan, from the interior of one side of the rim to the other. These measurements are approximate because many frying pans and woks have a curved upper rim, making precise measurement difficult. The standard naming convention uses top diameter, so while multiple brands may offer a 10" pan, there may be slight variations in size between each brand's 10" pan or wok.

My item arrived with a thin layer of oil. What is the purpose of this oil, and is the item ready for immediate use?

Some carbon steel pans and woks are shipped with a protective oil coating to prevent rusting before their first use. They should be thoroughly washed with warm, soapy water to remove the oil and then properly seasoned before use.

What's the difference between a riveted and a welded handle?

A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.

For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.

This is a decent black steel pan. I don't believe it is carbon steel. I may be wrong? But, it's much lighter and thinner than my Matfer Pan which is closest in photo.
