This thermostat kit replaces the one that came with your unit and allows your fryer to continue heating and cooling as it should. With the ability to measure from 200-400 degrees Fahrenheit, this thermostat has a 3/8" x 3 1/2" bulb, 36" capillary, and a 1/4" stuff box.
