This carving knife is perfect for cutting thin meats and cheeses. The blade hardly ever need to be resharpened but we do it once a week to be safe
Nice knife. A little heavy for my taste. You ne d to make sure it has a sharp edge on it before using it to carve meat. . Does take some work to keep that sharp edge on it.
Bought this specifically for Holiday carving but now I use for all meats. The long handle is a better safety feature in preventing cuts. Doesn't need a lot of sharpening in between uses.
Great carving knife for the price: Blade material is 5Cr15Mov which is a widely used steel for kitchen knives and high quality scissors. The handle is a bit too small for my taste, but to each his/her own. The overall quality of the knife is surprisingly nice given the price. Since it is forged, the blade is quite thick which adds to the weight of the knife itself. It comes out fairly sharp from its packaging but could be a tad bit sharper. From other reviews, some have noted issues with the handles, but the handle and the rivets feel very solid, and have a high feeling to them.
This knife it well made, well weighted, and a great knife to have around for carving large roasts with precision at the buffet line or in the kitchen!
