These may be pricey, but it has an aluminum bead in the rim (the bead is what forms the rigid rim) instead of a steel bead like the cheaper sheet pans out there. What's the difference? Over time, constant washing of the pans will allow water to seep into the pan rim (even if it's sealed)and rust the steel, causing the rim to deform, open the seal, more water to get in, more rust to form, and rust fragments to fall out during use. We used to have this problem and needed to replace the pans every 2 years. Aluminum doesn't rust like steel, so the pans actually last years longer. Plus I don't have to worry about the rust flakes ending up on our dough table and finding their way into our product. I wish these were cheaper, but glad they are an option!
