Take soups, sauces, and gravies safely from chilled to hot and ready to serve in the same unit with this Vollrath 72018 Cayenne 7 qt. "Heat 'n Serve" rethermalizer / warmer package! This package comes with everything you need to put this unit into service right out of the box, including the unit, 7 qt. inset, and hinged cover. This rethermalizer has an insulated resin well and a non-stick heating element, both of which prevent scale buildup and allow it to use less energy than other comparable units. Plus, its low water indicator light lets your staff know at a glance when it's time to refill the well!
Thermostatic temperature controls make precise temperature monitoring a breeze, and the controls are also recessed to reduce the risk of the temperature settings accidentally being changed. In addition, this soup warmer features a wide, dripless lip to prevent messes and non-skid feet for excellent stability while in use.
This unit requires a 120V electrical connection and has an output of 800W. It comes with a 6' cord.

Yes, you do. We do not recommend running warmers like this without water, as you will run the risk of burning out your element or scorching your food.

Warmers are designed to hold food that has already been heated to the appropriate serving temperature of 150 degrees Fahrenheit or higher. Rethermalizers, on the other hand, reheat chilled foods through the HACCP "danger zone" to a safe serving temperature within a controlled timeframe. To meet industry acceptance criteria, rethermalizers must be capable of heating contents from 40-165 degrees Fahrenheit within 120 minutes and maintaining a temperature of 150 degrees Fahrenheit or higher.
What is the difference between the direct contact heating system and other warmer heating systems?
Direct contact heating encourages more efficient heat transfer because the heating element is in direct contact with the water in the well. This type of heating not only saves energy, but eliminates the need for vents to be cut into the sides of the warmer for excess heat to escape.

This rethermalizer is perfect for our soups and our pulled pork. You do have to add water to it frequently but it lets us reheat to proper temp without doing it in a pot on the stove.
