Vollrath Redco Wedgemaster: Cleaning

Welcome to Vollrath University. I'm Chef Rich, and we're here today to talk about cleaning the Redco manual food processors. Generally speaking of all of these products, a couple of things. A couple of things - one, always clean them as close to the time that you're finished using them as possible. The less time the product has to dry on the unit, the easier it's going to be to clean. Things like the brushes, the types that we supply or one of your own, and hot, soapy water and a good clean towel go a long way to cleaning all of these products. Dishwashers with their harsh chemicals can pit all of the aluminum pieces. There are some pieces on these that we'll add address later that can go through a dishwasher, but generally speaking, anything that we have here that's the aluminum - probably don't want to put that through the dishwasher. Okay, so now let's talk about the Wedgemaster and the Wedgemaster II. These items are specifically designed for citrus - lemons, limes, wedging those products - and those acids from citrus can be very corrosive to metals, especially aluminum. So for that reason, we've made the Wedgemaster II out of polycarbonate. The base is a polycarbonate; the blades are stainless steel. It's 100% dishwasher safe. The Wedgemaster I - this unit is made out of aluminum, so this unit we do not recommend going into the dishwasher. So, as I've said, the Wedgemaster II can be put in the dishwasher. If you want to clean this one in the sink, it's very easy. Both of these units - it's a recommended way for the sink to take the units, take the bottom side, spray the blades off... you can use a bristle brush and some good soapy water to get in there and clean anything that may be stuck, but always from the bottom. Not from the top. If you're going from the top side, the bristles on the brush can actually dull the blade a bit, and it's just not as safe. The pushers on either of the units, again, spray them off. It's probably easiest, or use a good, bristle brush. And a good thing about cleaning any of the Redco products - a good towel and some hot, soapy water to clean them off goes a long way. Just keeping the units nice... mild soap is best. Leave the units to air dry. People ask if you can take a towel and towel them off - sure, you can. I just feel that anytime you've got the towel, it's an opportunity to snag the towel on the blades, and it's just not as safe cleaning around the blades. Leave the unit to air dry, and it'll be fine. Finally, when you're done both units, anything that slides or moves... petrol gel. Okay? This is specifically designed for this use. We don't want to use vegetable oils or anything else on here, as those can dry and get gummy over time. This product is specifically designed for these. And just a little bit on the slides or the uprights when you're done keeps the unit operating smoothly. Okay? Everything is nice and smooth. And that's it. Welcome to Vollrath University. I’m Chef Rich, and we’re here today to talk to you about the Vollrath line of manual food processors. I think that’s probably one of the most important things about the manual processors. No matter who prepares the fruit or the vegetable, or other products that you’re using, they’re always going to look the same. Notice the redesign on this is much safer and easier to use. Competitive designs, the blade assembly can fall on your hands when using it; whereas, the Redco design now has it spring-loaded so it always returns the blades to the top position. Two hand operation for safety, much faster than doing this with a knife; very durable unit. Let’s talk about a high-margin item, a blooming onion- very high-profit item in a restaurant. Remember, fresh is best versus something that’s been prepared off-site and stored for a while before it gets to your operation. And then consistency. Doesn’t matter which product line you’re looking at, consistent results help operators achieve consistent results in their restaurants, right?
