Welcome to Vollrath University. I’m Chef Rich, and we’re here today to talk to you about the Vollrath line of manual food processors. The reasons that we like manual food processors: speed- up to over ten times faster than traditional methods. Labor costs- many times if you’re using less skilled labor or even if you have an operation that uses high school labor, they can use the manual processors versus powered food processors. Preparing something fresh at the time you’re going to use it is always going to be better than buying something that’s been prepared off-site in another facility, and consistency. I think that’s probably one of the most important things about the manual processors. No matter who prepares the fruit or the vegetable, or other products that you’re using, they’re always going to look the same. Competitive designs, the blade assembly can fall on your hands when using it; whereas, the Redco design now has it spring-loaded so it always returns the blades to the top position. Welcome to Vollrath University. I'm Chef Rich, and we're here today to talk about cleaning the Redco manual food processors. Generally speaking from all of these products, a couple of things. One, always clean them as close to the time you're finished using them as possible. The less time the product has to dry on the unit, the easier it's going to be to clean. Things like the brushes, the types that we supply or one of your own, and hot, soapy water and a good, clean towel go a long way to cleaning all of these products. Dishwashers, with their harsh chemicals, can pit any of the aluminum pieces. There some pieces on these that we'll address later that can go through a dishwasher, but generally speaking, anything that we have here that's the aluminum - probably don't want to put that through a dishwasher. Okay, so let's talk about the Redco units then with the removable, thermoset blade assembles. All of these units here, the Redco 5.0, the 3.5, and the InstaSlice, all use the thermoset blade assembly, which is really nice. These blade assemblies pop right out and are easy to clean. Now, these can go through a dishwasher. They have stainless steel blades, so they're dishwasher safe, and they come out very easily from any of the units. If you don't have a dishwasher or you want to use something like a stiff bristle brush - always from the backside; never from the sharp side... keeping your hands away from the sharp side and the brush doesn't dull the blades a little bit. I think one of the most important things when you're cleaning these products is to never put the aluminum parts through the dishwasher. For that, I recommend just imply a nice, damp towel with some soap on it. Warm water goes a long way to clean things. Again, we can always use our brush if we need to get inside the fingers in the pusher plates or the pusher heads on the 5.0 units, or any stubborn stains. Again, it's always best to do these things as soon as you can right after using the product. That's the InstaSlice with the 5.0s and 3.5s. Another safety feature - remove the pusher heads. Don't try to keep the pusher heads in place and take the blade assemblies off, because if you have your hand here, it's unsafe. You always want to remove this and simply pop the assemblies out. And now they are dishwasher safe. Clean the base with hot, soapy water - never through the dishwasher. Reassemble the product when you're finished. Again now, the blade assemblies always have a key somewhere in it that only allows it to be put in the correct way, so you don't have to worry about putting the blades in right. Back in place... secure firmly. And anything that pivots or moves or slides - petrol gel. A little bit of petrol gel on the uprights will just keep those moving very easily and safely so you don't have to use excess force. It's very simple. Always keep safety in mind... never through the dishwasher... hot, soapy water and a good brush go a long way.
