The perfect size for cooking and serving a traditional paella, this pan is made of lightweight and durable carbon steel which is a great conductor of heat. Dimples on the pan's cooking surface create irregularities allowing heat to spread more evenly across the surface.
The shallow, wide shape of this pan creates a large cooking surface that lets liquid evaporate quickly for optimal development of the socarrat. Socarrat, the crispy, caramelized base of the paella, is toasted on the bottom of the pan which is why this pan is designed to serve the paellas as well so the socarrat isn't lost. When picking a paella pan, it's best to keep serving quantities in mind, so this 24" pan is designed to serve 9-16 guests. It features two large-loop handles that make transporting your dish from the stovetop, grill, or open flame easy as you cook and serve.
Due to the carbon steel construction, you will need to pre-season your pan for optimal performance. Pre-seasoning your pan before use helps prevent rust and corrosion. It also helps a patina to develop over time, absorbing and enhancing the flavors of future dishes. For a more thorough seasoning, use a neutral oil like olive oil or flaxseed oil, and place your pan in the oven at 350 degrees F for 2 hours. Re-season anytime the layer of seasoning is damaged. Rust develops when exposed to water for long periods of time, so avoid soaking your pan when cleaning and ensure it is completely dry before storing. If rust develops, scrub with an abrasive sponge or steel wool to remove then clean and pre-season. Always wash the pan by hand, quickly dry it, then store it in a dry place away from humidity.
