Welcome to Vollrath University. I'm Chef Rich, and we're here today to talk about cleaning the Redco manual food processors. Generally speaking of all these products, a couple of things. (1) Always clean them as close to the time that you're finished using them as possible. It's just that the less time that the product is left on the unit, the easier it's going to be to clean. Things like the brushes, the types that we supply, or one of your own, and hot, soapy water, and a good clean towel go a long way to cleaning all of these products. Dishwashers with their harsh chemicals can pit any of the aluminum pieces. There are some pieces on these that we'll address later that can go through the dishwasher, but generally speaking, anything that we have here that's the aluminum - probably don't want to put that through a dishwasher. Okay, now let's talk about the potato cutters. Okay, these units have a blade assembly that's a little more difficult to remove. It can be removed by removing these two nuts on the front; however, again, it's a little more difficult, so it can be cleaned in place. As with all the Redco products, the closer you can clean these to the end of use, the better. Anything time that the product is allowed to dry on, it's just that much more difficult to remove. So, as quick as you can after using it is when you want to clean it. With these products, these are heavy, so make sure you've got the unit closed. You never want to carry the unit in the open position. If you end up tipping it, this can come down and create a little bit of a dangerous situation, so always carry the unit with it closed. The easiest way to clean this unit is taking it to a sink, opening up the blade a little bit, and spraying the blades down from the backside. Also, a bristle brush at this point can help get in there to loosen anything that may be stuck to the blades. If you don't have a sink and a sprayer available, you can simply do it as we see with a bucket of hot, soapy water and your brush, and like this... and anything else on here that might be able to be removed with a brush... But with any of the Redco products, a good towel and some hot, soapy water can go a long way, as well. And you're just keeping anything cleaned up. Anytime you're back here by the blades, make sure that the handle is in the fully opened position and you have your hand on it to make sure that nothing happens, but be careful when you're back here. This unit is not recommended to go into the dishwasher. Anything with aluminum is just not recommended, so hand cleaning like this is the way to go. When you're finished cleaning the unit, just let it air dry; that's fine. Then, finally, on the slides - petrol gel. Now, this product is made especially for the slides. It's a safe product; it's not vegetable oils or anything like that that can get gummy over time. Just a little bit when you're finished cleaning the product keeps the slides and everything lubricated and operating smoothly. Okay? Very simple.
