This is a great steel. It holds up to daily use in my restaurant and can be rotated after a year or two of use to "fine" use. We use a two stage process with our steels. New steels are coarse and our previous coarse steels move to fine. Good value.

This is a great Victorinox Steel. We use it to sharpen our serrated 10" circular bun cutting blades on our bread slicer. We get at least double the use out of these blades and save tons of money deburring them our selves.
