How to Sharpen Your Knives

Follow these quick and easy steps to properly sharpen your knives. Place a damp towel on a cutting board to keep the stone in place. Then lubricate the stone with oil or water. Before you begin, you’ll need to find the optimal 22.5 degree sharpening angle. To do this, hold the knife at a 90 degree angle. Then, half the angle to 45 degrees, and then half it again to 22.5 degrees. Next, pull the knife heel to toe, following the proper angle about 5 to 10 times. Then flip the knife and repeat. This time push the knife toe to heel about 5 to 10 times, being sure to maintain the angle. Then flip the knife and repeat. To use a sharpening steel, start again with a damp towel on a cutting board to keep the steel in place. Then find your 22.5 degree angle. Pull the knife heel to toe, alternating sides around 5 to 10 times. Wipe down the blade with a damp towel, and you’ll have a sharp knife ready to tackle all of your daily prep work!

Caring for Your Oval Diamond Sharpening Steel:
A sharpening steel may become soiled through use and develop a grease barrier. The grease barrier will prevent the steel from "biting" and the knife will not be sharpened properly. To avoid a dirt build up, wash the sharpening steel regularly in hot soapy water and dry immediately to avoid any rusting. Polypropylene handles may be sterilized by boiling the handle in water.

    The Tablecraft DS2000 12" Oval Diamond Knife Sharpening Steel helps keep our knives sharp. The steel is oval which helps when you are running your blade across it.
    We have had this sharpening tool for a while. It has been a really good product, it had held up well and it sharpens nicely.
    I love these diamond steel. Everyone in my kitchen wants to use it! Plus it's priced better here than anywhere else. I need to buy another one asap!
    Nicely made and well balanced, diamond sharpening surface keeps knives sharp even after years of use. Won't attach to a knife magnet very easily, but does have a hook for hanging.
    I have always disliked using steel knife sharpeners until I encountered the Tablecraft brand. All the others seemed flimsy and broke easily. Tablecraft's steel knife sharpener worked better than any other steel knife sharpeners I've used.
    I never liked to use steel before. I always just used cheap knife sharpeners. This is a great steel that is easy to get a great edge with it!
    This table craft 12 inch oval diamond sharpening steel is OK it's a little rougher great that I'm used to own a diamond steel but we'll see how it works out
    The trick to keeping knives in good condition is regular sharpening, and frequent honing of the blade edge. This steel helps pull the edge of the blade back into position. Good tool.
    Rather disapointed as this product as it did not hold up to our daily knife sharpening. We have had other brands last a much longer time.

    We do get our knives resharpened professionally by a company, but when you can't wait for them to come in, this is a great tool to have handy in cases of emergency. Tried sharpening an old knife, and got a perfectly good and sharp knife.

    This is a great way to sharpen your kitchen knife. I've used this many times and gets my knifes back to brand new shape. Very durable and with the diamond knife it gives you a clean sharp edge.
    Great knife sharpener. Looks great, holds up well, and works well too all of our knives remain sharp and we have had no issues from this product
    I wasn't too impressed. Worked great in the beginning, but the steel built up with shavings from the knives after only 2 months. Now it barely sharpens the knives, I'm going to try oil stones.
