We learned the hard way not to pay attention to the way Sirman labels their dies: this is NOT a gnocchi die, at least not in the way most Americans would understand a normal potato gnocchi. Elsewhere on Sirman's website they call this a gnocchetti sardi, and that might be closer. It's probably something in between a gnocchetti and a conchiglie. WHATEVER you call it, it's a shell, and it's a nice shape. The size in the product title is accurate - roughly 19mm - and it's fairly thick and sturdy. The resulting pasta dries well, but the thickness makes for a decently chewy bite even if you cook it straight from fresh. We don't use it a lot, but it adds some variety to our product line, and kids dig it.
