The #36 fettuccine die is our workhorse. We make more of this cut of pasta than anything else. Wide noodles are a popular cut, and this guy delivers. The only problem: it's not fettuccine. Not to most people in the middle of the United States, anyway. We didn't realize it at the time, but Sirman (and most Italians, perhaps?) consider a 6mm noodle cut to be tagliatelle, and the 10mm cut is labeled as fettuccine. For most Americans, that assumption is reversed: we call the wider 10mm pasta tagliatelle, and we expect fettuccine to be a smaller pasta in the 6mm-8mm range. The product name is labeled with the correct dimension, but we were only looking at the pasta type name when we placed our initial order. Womp womp.
